Banana Pancakes


This was another off-the-top, what’s around recipe I made. Mostly just bananas & flour, the pancakes themselves don’t use any kind of sweetener. Using banana helps keep the pancakes a great mix of fluffy, dense, and sweet-but-not-too-sweet.

  1. Combine bananas & "milk" in blender, process until smooth.
  2. Combine flour & baking powder in a large bowl. Add milk-banana mixture and mix until smooth.
  3. If too dry, add more "milk" or water. If too moist, add more flour.
  4. Add chocolate chips & blueberries, mix well.
  5. Heat a frying pan/skillet to medium, and cook 4" pancakes. They are ready to flip once the whole surface of the pancake has bubbles on it.
  1. Combine syrup, jelly, and lemon juice in a small saucepan, and heat over low temperature, stirring well.

Raw Fudge (The Green Edition)

This is a bit of a twist on my usual raw fudge recipe, as I was only using the ingredients immediately available to me, and I usually include medjool dates as my sweetener. Oh, and because they are infused with cannabis, that’s usually not the case either haha.

The fudge itself ended up tasting just like a “Thin Mint” Girl Scout Cookie, and the dosage is just enough that you are extremely relaxed (and a little spacey) for the rest of the day.

Generally when making cannabis-infused foods, I would use a pre-made coconut oil extract, but that takes a few days to make, and this was a spur-of-the-moment creation. I will put up the detailed instructions on making coconut oil in the future.

  1. Remove the stems, then grind your cannabis in a coffee grinder until it is a fine powder.
  2. Combine coconut oil, coconut manna, and milk in a saucepan or double-boiler. Heat on low until the oil & manna have melted, stirring regularly.
  3. Add ground cannabis to the saucepan, and continue stirring for 15 minutes.
  4. Add cacao paste, and stir vigorously until it has all melted into the mixture.
  5. Turn off the heat, and add in chia seeds, raisins, and peppermint extract, stir until well mixed.
  6. Line the bottom of a glass baking pan with sunflower seeds, then pour the fudge mixture on top.
  7. Place in the refrigerator and let stand until firm. Cut into ~ 1"x1" squares, and serve.
Recipe Notes

I made this recipe in Denver, Colorado, where this is not the case, but please be aware that in many places there are organized crime syndicates who will extort, threaten, and assault you for possessing, processing, or consuming cannabis flowers. If you happen to live within the self-described boundaries of one of these gangs, please use caution when procuring the ingredients and eating your fudge.


Thursday Thoughts: March 17, 2016

With the Spring Equinox just 3 days away, and the Full Moon/Lunar Eclipse another 3 days after that, and the New Moon/Solar Eclipse just over a week behind us, we are certainly in a high-energy window right now.

When it comes to astrology, I don’t really let other people’s interpretations & ideas about the meanings of things affect my life. I do, however, stay up-to-date with the moon cycles, the equinoxes & solstices, and other major alignment points in the energy cycles of the Earth & Universe. It is without question that there is energy hitting the Earth from celestial bodies; we can see light from stars, the moon controls the tides, etc. I just feel into the energy of these times, and try to just be really present with what feelings, attachments, and opportunities present themselves at these times. Of course, the goal is to be totally mindful & present with thought and deed, but I’m a work-in-progress, ever striving to find alignment with my full, unrestrained potential.

I personally look at each major point in the astrological world as an important time for me to set intentions, visualize what the next cycle has for me, and call in the guidance and support I need. Over the next week, with these two events lining up together, I am spending quite a bit of time writing out my intentions for the next 3 months, the rest of the year, and for the years to come. I am going to be creating a new set of flash-cards for myself, and probably a vision board as well. I would highly recommend spending some time in meditation and intention-setting on Sunday & Wednesday (as well as any day before, after, or in-between)

Feeding the Masses… For Free!

One of the most common questions I get from people about my travels is how I manage to stick with my organic vegan diet while traveling with almost no money, and more than that, feed tons of people that same medicine food. There is no one answer to that, as it involves a combination of home-grown foods, farmers’ markets, shopping the “reduced produce” shelf, and… dumpster diving.

For some reason, “western” culture is so dedicated to upholding the illusion of scarcity that businesses would rather toss pounds of food every day into the landfill than lower their prices a little bit. A lot of people tend to get stuck on that inefficiency, complaining about the percentage of food in America that ends up in the trash, and sometimes even asking for violent threats to be used against any company that throws edible food away. As with any issue, once you are aware of it, the best thing you can do is focus on possible solutions to it. In this case, by simply visiting your local grocery stores a little after they close, you are not only feeding people for free, but you are turning a “loss” as the company sees it into abundance.

Like so many things in the paradigm that we are transitioning out of, the idea that there isn’t enough food is not only based on a scarcity-mindset (and therefore not in alignment with reality), but is factually untrue.

This slideshow from last night, Saturday, March 12th, shows what our abundance-reclamation team came up with on a very short run, about 15 miles round trip and maybe an hour of our time. Besides 20+ pounds of potatoes (none of which were soft, sprouted, or moldy), 5 bags of apples (each of which had 2-3 smashed ones and 8-10 perfect ones), this particular evening one store had emptied its meat freezer.

While I personally do not consume meat, I know a lot of people who will eat these finds. The only thing I find worse than raising these animals in captivity for the explicit purpose of killing them, is to then throw away the meat, which is the entire justification for the genocide to begin with, “We need meat to feed people”. All of this meat was still packaged, still frozen, and it will be perfectly usable for many months to come. Sticker price on all this meat was just about $690. Let that sink in for a minute…

Here’s the breakdown of the meat that was tossed out:

  • 11x Beef Tenderloin (7oz)
  • 9x New York Strip (10oz)
  • 4x Rib-eye (10oz)
  • 10x Beef Stew Meat (16oz)
  • 3x Whole Chickens (~4Lbs)
  • 1x Chicken Breast (1Lb)
  • 1x Pork Chop (1Lb)
  • 1x Salmon Filet (8oz)

That’s well over 25 pounds of meat. 25 pounds of animal flesh, that would not even have been able to break down and feed insects & micro-organisms if we hadn’t reclaimed it, as it was all sealed in plastic.

We live in a universe of infinite abundance. Any time there seems to be scarcity, not enough of something, it’s an illusion.

Quick & Easy “Cheezy” Spinach Dip

The first time I’ve had the privilege to use a Ninja! I’ve never seen an avocado pit disappear so quick 🙂 This works great as a dip for chips or veggies, and even better as a spread on sandwiches. Some of this on one side and some traditional hummus on the other side… it doesn’t even matter what’s in between, it’s going to be delicious!

  1. Chop the spinach into 1-2" pieces, halve the avocado and scoop out the insides, then quarter the pit. Add all ingredients in the blender and mix on high until it reaches your desired texture.

Thursday Thoughts: March 10, 2016

Yesterday, while listening to some Abraham-Hicks recordings and waiting to see what new opportunities the world was going to throw my way, this came on. At first, I didn’t really notice it, but about halfway through the clip, I started to really get sucked in. I quickly decided that I was going to wait until it ended and go back to the beginning so I could write it down. As it turns out, I had my media player on shuffle, so it took about 15 minutes of searching through my library to find it again.

My plan is to read this to myself every night & every morning for the next few weeks, and if it resonates with you, I would recommend doing the same thing. Enjoy!


While I sleep, momentum is going to cease for me.

My point of attraction is resting.

I’m experiencing, while I sleep, a Law of Attraction reprieve.

While I’m sleeping tonight, momentum subsides.

When I awaken in the morning, I’ve pushed the reset button, and now I can jump in at any vibrational point that I choose.

I choose to jump in in a very general place.

I choose to jump in in the place of, “oh this bed feels good”, and “I really did have a nice time”, and “I sure did like this about this”, and “wasn’t that a beautiful thing”, and “doesn’t it feel good to be me”, and “hasn’t life been good to me over these days”, and “isn’t it nice to know that life is supposed to be good”

I like knowing that life is vibrational.

I like knowing that I am a translator of vibration.

I like knowing that Law of Attraction exists.

I like knowing that Law of Attraction creates momentum.

I like knowing that I can choose the direction of my momentum.

I like knowing that when I choose the direction of my momentum, that it becomes obvious to me.

I like knowing that I can’t get it wrong.

I like knowing that this is all for fun.

I like knowing that I am getting to do this, and that the entire Universe is cooperating to show me, in endless ways, what I’ve got going on vibrationally.

I like feeling the worthiness that is me.

I like sensing that Source is on my side.

I like the awareness that I can think out of alignment with Source, but that I always feel it.

I like knowing that I can guide myself back into vibrational alignment with who I really am.

I like knowing that whether I do or not, Source is still adoring me.

I like knowing that Source never takes attention from me, that any time I decide to lean in that direction, it’s right there for me to hook up with.

I like knowing that I get to create my own reality, and I like knowing how that happens.

I like knowing there’s no rush to any finish line.

I like knowing that other people are here like me doing the same thing.

I like knowing that we are all in this together.

I like knowing that we offer benefit to one another.

I like knowing that essentially we are all the same, we are all love looking for a place to happen, we are all clarity looking for a place to happen, that’s who we naturally, innately are.

I like being in this physical body.

I like the knowledge, the intelligence of my self.

I like knowing how much alignment is taking place, even without me knowing it.

I like the awareness of how many things are already queued up for my success, that I don’t even have to think about at all.

I like having figured out what my place in all of this is.

I love the contrast of my life.

I love the exposure to life that generates pure desire within me.

I love wanting new cars and new houses.

I love wanting physical wellness.

I love wanting currency that is so portable and so wonderful to exchange.

I love living life.

I love embracing life.

I love engaging in all the physical things.

I like being physical.

I like the emotional basis, but oh boy, do I like it when my emotional basis is allowed to increase my momentum, unfettered by contradictory thought.

I love the power of creation that flows through me.

I love understanding that I am a focusing mechanism.

I love understanding that Source flows through me.

I like thinking about Source focusing through me.

I like being of benefit to Source.

I like knowing that the Universe is expanding, and that I am a part of that.

I love the feeling of my part in the expansion.

Oh, do I love an idea when it occurs to me.

I love the feeling of an idea.

I love being present and conscious and realizing an idea that is expanding within me because I am not restricting it with contradictory thought.

I love the sensation of energy moving through me.

I love being the vessel through which Source creates.

I love being the cooperative component of that which is Source.

I love adding to the environment in a positive way.

I love tuning my frequency to that of Source.

I love being the catalyst for others to tune their frequency too.

I love being a physical being in this time-space reality, knowing what I know.

I love knowing that I can’t get it wrong, and that I’ll never get it done.

I love knowing that I am an eternal being.

I love knowing that I will always be present, that my consciousness is real, that my consciousness is always focused, and I love knowing all of those who have lived before, whose consciousness is still alive and real and available to me.

I love the infinite intelligence that is available to me.

I love knowing that all I have to do is softly allow a frequency of well-being, just for a little while, and that Law of Attraction will add to it until I have access to infinite intelligence on any subject in the world.

I know that I can expand as far, and as fast, as I decide to, and I know that the underpinning of all of that is to just find something to feel good about, or just remembering the emotion of feeling good.

I love knowing that we are not measured against one another, but that we are all here in support and advantage to each other.

I love remembering the trajectory that we are all on.

I love acknowledging the diversity of that which is us, and recognizing the perfection of that diversity.

I love knowing that I can be in this place where I can feel such clarity of what Source feels, that I can look out on the world and feel good about everything that I see, because I am in alignment with Source, I will not be able to see things that are not in alignment with Source.

I love knowing that this world is expanding, and I love knowing that my part in it is the expansion as well.

I love knowing that what I’m focusing on right now is important enough that a new thought is available, and I love the feeling of the new thought.

I love knowing that I am so unique in my expression of life here that there is never a duplication of anything, I’m not copying anything anybody else is doing. I’m living in this time-space reality uniquely, launching my unique rockets of desire, and I can feel the way Source revels with me in the launching of a new idea.

I can feel the enthusiasm that Source has, in the expansion of the universe that just happened in the conversation I just had, or because of the experience that I just had.

I love knowing the unyielding, ever-offered, undeniable, unconditional love that Source feels for me, and for everyone else.

I love basking in the environment of that well-being.

I love this soup that we all make up.

I love the experience of creation, even more than I love what I am creating.

But I understand that if I did not have an object of attention that I am wanting to create, I could not experience this delicious experience of creation.

I am a creator.

I live for the experience of creation.

I am a co-creator.

I live for the experience of co-creating with my non-physical partners, with my physical partners, for the expansion of all-that-is.

Life is so good for me.

Life is so good for all of us.

We are all in this together.

This is the perfect time to be alive.

There’s nothing better for me to do that what I’m doing right here, right now, finding the fullness of this moment in time.

There’s not someplace else I should be, there’s not someplace else I’d rather be.

There’s not something else I should be doing, there’s not something else I’d rather be doing.

I’m fully invested, fully focused, in this moment, reaching for my center of well-being and then allowing the Universe to show me how far I’m able to go right now with this, and then with this, and then with this, and then with this, a cheering section behind me all the time, all the love and support that could ever be offered, offered to me and to everyone else, no exception.

All I need to do is find a frequency and practice it until it’s my normal frequency.

“Best Abraham Rampage Yet”

Anarchapulco 2016 Re-Cap

2 weeks ago, I had the pleasure of attending the 2nd annual Anarchapulco conference. Last year’s conference changed my life; I met some people who are now great friends, I heard Dayna Martin speak for the first time, which was no small part in my decision to have children in the near future, and when I got back to Portland from the conference, I knew I couldn’t continue working a job & paying rent.

This year, I knew I wanted to get even more out of the experience, spend more time with the community, and do whatever I could to make it life-changing for everyone else attending. To start my journey to Acapulco, 3 friends and I traveled to Guatemala, attended the Rainbow Gathering there, and spent some time visiting Lake Atitlan. At the beginning of February, I made my journey north, finding a ride with some friends on their way back to Colorado. Over the course of our 2 day drive from the lake to Acapulco, we managed to get to the Guatemala-Mexico border right as it closed for the night, and we were stopped about 2 dozen times at Policia Federales checkpoints. The first time we were stopped, all three of us were asked to step out of the car. I had been in the back of the van full of gear, wearing just a pair of shorts as it was ~90 degrees out, and when I got out, the female officer pointed at my chest hair and looked at her compatriots a few times before running her hands through it and making a purring sound. Getting sexually harassed by the police less than an hour into a country has got to be some sort of record.

Upon arriving in Acapulco, I met up with Juan Galt, one of the local anarchists, who had been helping me find a place to rent, and offered to let me stay with him while checking a few out. Juan and his roommate Ryan are awesome guys, and starting that very night, we had many hours of wonderful conversation. Juan is working on a documentary series about Acapulco and its anarchist community, and Ryan is creating a wi-fi network to span the city. Since the guys had a blender in their apartment, I started making us all smoothies every morning, one of my favorite ways to start the day. After talking to Ryan about my plans for my website, he helped me set everything up and get started, and with the laptop that Juan let me borrow, I got to working. After a couple of days staying with them, I ended up renting the apartment downstairs for the rest of the month, so I would have a place for my friends to stay when they started arriving in town. As it turned out, the apartment across the hall from me was also being rented by Kurt, another anarchist in town for the conference, so we started getting to know each other as well. As people started arriving to stay with Kurt or myself, I kept making smoothies for everyone, a slightly bigger batch each day it seemed like. Just about every day there was some kind of meet-up, party, or adventure to go on with the community in town, and I took every opportunity I could to connect with these amazing people. As more and more people started arriving in town, I began making large meals and offering them to anyone who wanted to try my vegan cooking. Many of these folks gave me pesos when they would come and eat, and this allowed me to keep making more food for myself, my neighbors, and anyone else who was hungry. After my first two weeks in Acapulco, I mentioned to a friend that I already felt like I had gotten more out of my trip than last year, without the conference even having started yet.

As the conference drew close, I focused on getting my website to the point where I felt comfortable handing out business cards with a link on them. On Wednesday the 17th, the first day of workshops for the event, I reached out to my friend Alais, who was on her way down to headline the concert, and discovered she had missed her flight. After many hours of scrambling, we lined her up an alternative, which was more complicated, but would still get her to town a few hours before the concert was scheduled to start Friday evening. I spent much of Thursday cooking a huge dish of curry and putting it into containers to share with people. Friday I headed to the conference room and listened to Jeff’s opening speech, as well as the one after him (the only speeches I actually heard all weekend), before heading back to my place to pick up some meals to deliver, then catching a taxi to the airport to pick Alais up. The rest of the day was just a blur of talking to amazing people, giving out business cards, and re-connecting with friends I hadn’t seen since the 2015 conference. When the conference ended for the day, we brought the sound equipment out to the pool area and started setting up for the evening’s concert. Once it was obvious that the set-up was going smoothly, I went to wake Alais up from a nap, get a smoothie from Verde Vegan, and head to the concert. Things didn’t get rolling until a couple of hours after they were scheduled to, but when they did! Nadia D opened it up, and her voice was absolutely beautiful. She was followed by Jeff Berwick himself, performing a song from his past life as the #2 white rapper in 90’s Canada. Next up was my good friend Kurt, performing a few songs, including fan favorite “To Acapulco“. L-Dixon came on next, and While I had never heard of him before, I’m definitely a fan now. Finally, Alais came on stage and absolutely BLEW EVERYONE AWAY! You would not believe the amount of praise she got from the audience (and I did for getting her down there).

For the next part of my experience to make sense, I need to mention part of last year’s conference. Both years now, Dayna Martin has offered a full-day workshop on peaceful parenting & unschooling. Last year, since I had no intentions of having children, I skipped her workshop. I did, however, catch her 30 minute presentation during the conference proper, and besides bringing just about everyone in the room to tears, her talk was one of the major factors in my recent decision to get myself to the point that I am the kind of person I want to see raising kids. Getting ready for this year’s conference, I decided that I most definitely would be attending her workshop this time around. About a week before the conference, I sent out my most recent email update, and at the end of the email I mentioned that I wanted to attend this workshop (a $150 cost), and asked for assistance coming up with these funds. About a day later, I received a message that Dayna was hoping to have some vegan treats handed out at the end of her presentation during the conference, and if I would be interested in making & distributing these, I could attend the workshop. Of course I jumped at the opportunity, excited not only to attend the workshop, but also to be able to share some food medicine with all the attendees of the conference. I decided on making a no-bake cookie / bliss-ball mashup (recipe to be posted soon), adding a good bit of ginger and turmeric for immune system support as many at the conference had been coming down with various bugs. First thing Saturday morning, I headed up to the Freeman house, where Dayna & her family were staying, to prepare the treats. I was at the house until about 3 in the afternoon, getting to know Dayna & her husband Joe, and getting to observe their interactions with their kids. The cookies were extremely gooey at this point, as I had never made gallons of bliss balls before, and the amount of moisture was way off. We all talked about the possibilities, and let go of any attachment to the desserts being given out at 5:30 during her speech. When we left the house and their family all went to Verde Vegan to grab lunch before heading to the conference, I bought some coconut flour and headed to my apartment to see what I could do. I managed to get the moisture level a little more normalized, and my friends helped me roll up almost 300 balls just in time to get over about halfway through Dayna’s talk.

No Bake Anarchookies

Sunday morning, I headed out early to start preparing food for a post-conference party on Monday night that I was helping cater. We started the day with a trip to the grocery store, where we filled 2 entire carts (to the point of overflowing) with food, then got all that food, as well as the 4 of us, into a Volkswagen Beetle. From there we headed back to the villa, and I spent the next hours making huge amounts of hummus, guacamole, superfood pudding, chocolate dip for the fruit tray, and sunflower seed pate veggie bites. I caught a ride back to the conference and spent some time mingling & networking before calling it another early night. Monday I started the day with smoothies for the gang once again, then headed off to Dayna’s workshop (although I already felt like I had gotten more than I hoped for just from hanging out with her and her family). While waiting for things to get started, I realized it would be awesome if Alais could perform for everyone at the party, so I started reaching out to everyone who had some say in the use of the sound equipment. The workshop was great, offering quite a bit of insight and many stories of how the Martin family handles their lifestyle. I won’t go into too much detail here, as I’m planning to do a write-up about my take away once I finish reading Dayna’s book, “Radical Unschooling”. After the workshop was over, I went back to my apartment to freshen up, then back to the hotel to round up the sound equipment and head up to the villa. When I got there, Alais & Ryan took over setting up the equipment while I made ingredients lists for my dishes, leaving one of my business cards next to each one as well. Alais got a chance to perform about 3.5 songs before we started having some technical difficulties.

I spent the next week at a VERY low energy level, mostly just sleeping, listening to music, and smoking surprisingly stony Mexican weed. At the beginning of March, after spending my last evening in town with the Freemans, I caught a bus to Mexico City, then 2 flights to get my to Albuquerque, New Mexico, where I am writing this.

Although I missed much of the “conference” in terms of the speeches, I can certainly say that my experience was even better than last year, the variety of topics being spoken about was much more widespread, and I met many more people I resonated with than the previous year. You can be sure I’ll be attending Anarchapulco again next year, and I know it will be even better than this year.

The 6 Focuses of the Paradigm Shift

(This was originally released November 21, 2014 at FREE CASCADIA and I have not altered it in any way from that original release.)

I came up with this idea over the past couple of months, and wrote this on my bus ride to work about a month ago. This is very much a working draft, so please feel free to give feedback so I can flesh it out more. Also feel free to re-post it and such, it’s just something that I want to get out into the consciousness!

SOVEREIGNTY is acknowledging that you are a free, infinite being; completely responsible for everything you do, say, and experience. Sovereignty is also acknowledging that every other person is also a free, infinite being, and just as no one else has the right to initiate violence against or impose their beliefs on you, you don’t have the right to initiate violence against anyone else. This is extremely crucial to any advancement of your consciousness or vision for the world.

UNITY is acknowledging that we are all one. Every man is your brother, every woman is your sister, every animal is your cousin, every plant is your uncle, and every rock is your uncle. Just as every cell in your body seems to be a separate entity under a microscope, WE only look separate from our point of view, but we are actually just cells in the organism that is the Earth (and the organ we make up is our bioregion).

CLARITY is doing your best to see the world as it truly is, and how you want it to be. In watching what happens around you and what other do, this means not having assumptions, and not applying your own beliefs & expectations to other people. Equally, if not more, important, this means not letting others impose their beliefs & expectations onto your reality. In the way you talk & think, this means not using euphemisms created by people trying to oppress you; war is mass murder; arresting is kidnapping; taxation is theft. Watching television, listening to the radio, reading the newspaper, or taking in any other forms of fear-mongering & hypnosis lessens your life experience and restricts your SOVEREIGNTY. What you’re thinking about & giving your focus to creates your reality, so focus on the positive changes, the things that bring you joy, and the things that you want more of in your life.

VITALITY is the love of and care for your physical body. We are energy beings temporarily inhabiting these physical vessels we call the human body, but as long as we are in them, we should take care of them. It’s important to our happiness & growth to keep our bodies healthy, fit, flexible, and purified. Remember, the healthier you are, the healthier the world is. There are many aspects to this, the most important of which I think are:
-Physical practices like yoga or martial arts to keep your body in shape and you in your body.
-Diet: Eating food free of GMOs, pesticides & herbicides, eating mostly raw fruits, vegetables, seeds, and nuts, and drinking tons of fluoride-free water every day.
-Vibrational intake: Listening to music that makes you feel good, having as few electronics around you as possible, not living near power lines, cell towers, or radio towers. The entire world is vibration, what you see, what you hear, what you feel are all just different frequencies & wavelengths.

CREATIVITY comes from listening to your true self, to the voice of god, source, collective conscious, or the universe, however you refer to it. This creativity can be seen in a musician’s song, a painter’s canvass, a wire-wrap, a book, and many things you may not immediately think of as art. The engineer designing a new water filter, the farming making the perfect soil blend for his crops, and the protester coming up with the catchiest, deepest quote for a sign are all artists practicing their creativity. By picturing ourselves as artists, and the world as our canvass, we can open our minds to that source energy and let new systems & solutions flow through us to create the world we want to live in.

THRIVEABILITY[RESILIENCY] is simply living in balance & nurturing respect with the rest of the Earth. For most people now, life is as far from balanced as it can be, and while we can’t expect to convert immediately to a holistic, sustainable lifestyle, you can certainly keep that vision in mind and consciously take steps towards it every day. Only buying local organic food reduces petroleum use, growing your own even more-so. An electric car is an improvement over gas, public transport is even better, and your feet or a bicycle is better yet. There’s no reason to buy a new product if you can find a used, un-needed one from Craigslist or friends that will suit your needs. Get to know your bioregion, love it, and support it!

I understand that this is a whole lot to take in. I suggest you seriously evaluate where you’re at in life, choose something to improve, and make a commitment to do so. Once that improvement is habit, choose another step and a make a commitment to that one. If you’re 1000 steps from your goal, it may seem like a long, difficult walk. That first step is easy though, and not only does it get you that much closer to your goal, but once you get moving, momentum takes over. Each improvement is another victory, gets you closer to the life you want, and moves the world forward. Celebrate these little changes as you make them. What you focus on is what you experience; when you focus on the positive changes you’re making and other people making positive changes, guess what you’re going to experience more of.

Veggie Enchiladas

This is one of my favorite dishes, and as with everything that I cook, it’s totally different each time. The most important parts, for me, are the sweet potato, onion, garlic, and a spice-set that includes cumin, coriander, paprika, and cayenne. This particular recipe is from November of 2015, and was created as part of an exchange I was doing for yoga classes in Portland, Oregon. Usually the sauce is tomato-based (or tomatillo), but this time I wanted to go with something creamier, with a bit of a cheesy taste to it. The cashews & macadamias give the cheesy taste, as well as quite a bit of extra protein. If you want to go a little cheaper, replace those with sunflower seeds, it won’t be quite as rich, but the flavor will be similar.

The Base
  1. Preheat oven to 350 degrees
  2. Cube parsnips & sweet potato, combine in a oiled roasting pan.
  3. Lay pumpkin seeds in one layer on oiled cookie sheet, sprinkle lightly with salt.
  4. Roast both pans, stirring each 1-2 times a. Parsnip & Sweet Potato: 20-40 minutes depending on texture wanted b. Pumpkin Seeds: ~10 minutes
  5. Dice your onion, garlic, carrots, cilantro, and green onions. Combine these, and the rest of the filling ingredients in a large bowl. Mix well.
  1. (While things are roasting) Combine all of your ingredients in a blender or food processor, and blend to a smooth consistency, added water as needed to accomplish this.
  1. Bring the oven to 300 degrees
  2. Lightly oil the bottom of a large roasting pan and assemble like so (bottom – up): Tortillas, Filling, tortillas, filling, sauce.
  3. Cover pan with tin foil and bake for 15-25 minutes, to marry flavors and bring everything to a uniform temperature.
